As the days vary slightly each year you can check with the F1H²O websites for the exact schedule. In 2012 the Abu Dhabi Grand Prix is on 29th and 30th of November.
If you can stay over a 10 day period you could travel to Sharjah as well to see the Grand Prix which happens there a few days after the Abu Dhabi race (6th and 7th of December in 2012).
During the race period there are other forms of entertainment in the city and the event is rounded off with a fireworks display on the last night. Also in the region is the Grand Prix of Qatar, Doha which is held in March.
